We have worked closely in conjunction with the British Wagyu Breeders Association to develop DNA ear tags. The tags take a punch of skin from the calves on insertion which we can send off for DNA verification. This guarantees to both The Yorkshire Wagyu Company and our customers and consumers that our product is genuine.
Because we collect and store the DNA from every animal, we are able to order Yorkshire Wagyu in a restaurant, send it away for testing and be able to discern exactly which animal the meat has come from. We think that this affords us a higher level of traceability than anybody else in the country. It also allows us to have some peace of mind that people who use our products are dedicated to the provenance of the product from field to fork.
